I thought I would share my mushroom frittata recipe from last week with you...
1 cup sliced mushrooms
2/3 cup chopped onion
2/3 cup chopped green pepper
2 cups chopped zucchini
1 minced garlic clove
5 eggs
2/3 cup light cream (I just used milk that I already had on hand)
1/2 t. salt (I use just a pinch)
dash pepper
1.5 cups cubed bread
4 oz. cubed cream cheese
1/2 cup shredded cheddar cheese
Saute mushrooms, onion, green pepper, and squash in non-stick cooking spray until crisp tender. In last few minutes, add garlic. Separately, beat eggs with cream, salt and pepper. Add mushroom mixture, egg mixture, bread cubes, cream cheese, and grated cheese. Stir thoroughly but lightly so that cream cheese remains intact. Pour into 9" pie plate coated with non-stick cooking spray and bake at 350 for 45 minutes or until set. Cool 10 minutes.

Menu plan Monday, er... Tuesday
I am a day behind, but here is what we are having this week. I like to list the sides too because it helps me plan better! I am also on a quest to save more on our grocery budget. I will try to write some about that too.
Sunday - leftover 2 Bean chicken Chili
Monday - Tilapia, baked potatoes, green beans
Tuesday - Mushroom Frittata, homemade bread (bacon for Sean)
Wednesday - Leftover black bean tacos, corn
Thursday - Pizza on homemade whole wheat crust (vegetarian for me, sausage for everyone else)
Friday - We are having company so ham balls, mashed potatoes, green beans, yeast rolls
Saturday - At someone else's house!
My green beans are from the garden and I had a coupon for potatoes this week. I love it when I have coupons for fresh things! If you hadn't noticed, I am also semi-vegetarian meaning I will eat chicken and fish occasionally and if I am at your house and you serve me meat, I will eat a small portion. I don't want to be rude. :)
Sometime I will have to post my recipe for the mushroom frittata because it is an excellent meatless dish that even the hubby likes.

I am new to this
I read blogs often, but this is my first attempt at my own. But I will give it a whirl.
After taking 2 weeks off from our at home preschool, we are back into the swing of things. Breaks are good, but I am a very routine person, so I appreciate the structure back in our day. G received some cool educational things for Christmas. Today we used her Melissa & Doug money set to talk about the coins and do some sorting.
I am working hard on being content with the winter. CONTENT is my focus word for the year. I read on another blog about choosing a focus word for the year, so I thought I would participate. I have never really been one to make resolutions at the New Year because I am a very goal oriented person and usually have several goals I am working towards at any given time anyway. So, for the moment, I will work on being content with being stuck inside. I will be oh so thankful when I can run outside especially. I am very thankful for our treadmill though. Without it, I do not know how I would be able to run in the winter since it is dark until just a bit before Sean leaves for work and dark again when he gets home. Plus, I am a big wimp when it comes to the wind around here.
